The Origin of Marshmallow
Marshmallow got its name from the mallow plant ( Athaea Officinalis ) that grows wild in marshes.

Development of Modern Marshmallow
The modern marshmallow confection was invented by French in the mid-1800s. Slowly, root of the mallow plant was replaced by gelatin as binding agent which still gave the candy its signature pillowy texture and the candy still kept the old.

Breakthrough Innovation by Doumak
However, in 1948, another milestone in the development of the modern marshmallow was the extrusion process by the American Alex Doumak.

Protection of Great Invention
He created and patented the extrusion process.

Development of Production
The extrusion process allow marshmallow to be produced in a fully automated way.

Process of Extrusion
It involves taking the marshmallow ingredients and running it through tubes. The ingredients are cut it into equal.

Popularity of Marshmallow
In 1950s, marshmallow became extremely popular in the United States and was used in a variety of food recipes.
